Yes, and it doesn't require special equipment or hard-to-find ingredients: just the right ingredients and an ice cream maker that does the churning for you. The most interesting part is that lactose-free ice cream and gluten-free ice cream are two different problems, with two different solutions, and it's useful not to confuse them.

In an ice cream parlor or supermarket, avoiding lactose and gluten means reading labels, asking questions, and hoping there's no contamination. At home, with your own ice cream maker, you have total control over the ingredients: you decide what goes into the bowl.

Ice cream is naturally gluten-free (but be careful what you add)

Let's start with a little-known fact: according to the Italian Celiac Association (AIC), ice cream in its basic composition — milk, natural yogurt, sugar, eggs — does not contain gluten. The problem is not the base, but what is added to it: semi-finished products, ready-made bases, neutralizers, toppings, and decorations can introduce gluten, and in ice cream parlors, the risk of cross-contamination during processing and serving is real.

This means that homemade ice cream already has an advantage: if you use fresh ingredients and check the labels of any additions (biscuits, wafers, cones, malt extract), you eliminate the risk of contamination that exists outside the home at the root.

Lactose-free ice cream: the real variable is what you pour into the ice cream maker

Lactose, unlike gluten, is a structural component of milk and cream: you don't eliminate it by choosing "clean" ingredients, you eliminate it by changing the ingredient. The two simplest ways are:

     lactose-free milk and cream ("highly digestible"), identical in use to traditional ones but with lactose already broken down;

     plant-based drinks such as soy, oat, almond, rice, or coconut, which are naturally lactose-free and yield ice creams with different but equally valid textures and flavors.

Basic recipe: lactose-free and gluten-free vanilla ice cream

A simple base to adapt to other flavors, designed for a domestic ice cream maker with automatic churning:

     500 ml of lactose-free milk or plant-based drink (almond, oat, or soy give creamier results than rice)

     100 g of lactose-free cream or plant-based cream

     100-120 g of sugar (agave syrup or honey are also fine, adjusting the quantity to taste)

     seeds from one vanilla bean or pure vanilla extract

Mix the ingredients cold, pour the mixture into the ice cream maker's bowl, and start the program: with an active compressor machine like Family Pro, no pre-freezing is needed, and in about 40 minutes, the ice cream is ready.
