The ingredients of magic

For 6 servings (and hearts won), you need:

  • 500 ml of fresh whole milk

  • 200 ml of fresh liquid cream

  • 150 g of sugar

  • 1 vanilla pod (or 1 teaspoon pure extract)

  • 4 very fresh egg yolks

  • (Bonus: a pinch of salt to enhance the flavor)

Preparation:

1. In a small saucepan, pour the milk, cream, and split vanilla pod. Bring almost to a boil, turn off the heat, and let steep for 15 minutes. The vanilla will work its magic.

2. In a bowl, whisk the egg yolks and sugar until light and fluffy. Add a pinch of salt. This is the basis of the creaminess, so don't underestimate it.

3. Gradually pour the hot (strained) milk over the egg yolks, stirring gently. Return the mixture to the heat, over low heat, and stir until slightly thickened (do not boil!). It's ready when it coats the surface of a spoon. Let it cool.
