Homemade ice cream made with an ice cream maker
Cream gelato is one of the most classic and beloved flavors of Italian tradition. Soft, velvety, and scented with vanilla, it's the perfect base for creating endless variations.
Today I'm sharing the traditional recipe , adapted to be easily prepared with an ice cream maker, just like in a real artisanal ice cream shop!

Ingredients (for about 1 liter of ice cream)

Whole milk (3.2%) – 500 ml

Fresh cream (33–35%) – 250 ml
-
Egg yolks – 5
-
Sugar – 150 g
-
Vanilla – 1 pod or 1 teaspoon vanilla extract

(optional) a pinch of salt , to enhance the flavor
Step-by-step preparation
1. Heat milk and cream
In a saucepan, heat the milk with the cream, vanilla and a pinch of salt.
Do not bring to the boil — the ideal temperature is around 80°C .
Remove from the heat and let rest for about 10 minutes.
2. Beat the egg yolks with the sugar
In a bowl, whisk the egg yolks and sugar until light and fluffy.
3. Prepare the custard
Gradually pour the hot milk into the egg mixture, stirring constantly with a whisk.
Transfer everything back to the saucepan and cook over low heat, stirring with a spatula, until the cream thickens and reaches 82–84°C (it must not boil!).
To check if it's cooked, run your finger over the spatula: if the mark remains clear, it's ready.
4. Filter and cool
Strain the cream through a sieve to remove any lumps or vanilla residue.
Let it cool to room temperature, then put it in the refrigerator for at least 4–6 hours (preferably overnight).
The mixture must be very cold before being put in the ice cream maker.
5. Churn in the ice cream maker
Pour the cream into the ice cream maker and start the churning program:

for the Tooa Family model: approximately 30 minutes ,

for the Tooa Family Pro model: approximately 40 minutes .
The result must be a true Italian ice cream : creamy, velvety and never frozen.
