Gourmet Recipe: Parmesan Ice Cream Crostini with Tomato Jam – A Truly Original Italian Aperitivo
Today we’re sharing another gourmet recipe that’s easy to make with any of our gelato machines. Ready to impress and delight, this sweet-meets-savory combo is the perfect aperitivo to wow your guests (or treat yourself).
Parmesan Ice Cream:
Ingredients:

80g grated Parmesan cheese

200ml of milk
-
100ml fresh cream
-
2 egg yolks
-
A pinch of salt and black pepper
Procedure:
1️⃣ Heat the milk and cream until they start to smoke.
2️⃣ Beat the egg yolks with a pinch of salt, then slowly add the hot mixture, stirring continuously.
3️⃣ Return to the heat and stir until slightly thickened.
4️⃣ Add the Parmesan and mix until completely melted.
5️⃣ Let it cool completely, then pour into the ice cream maker. (For this recipe we recommend the Milano or Milano PRO models)
Tomato Jam:
Ingredients:

300g peeled tomatoes

2 tablespoons sugar
-
1 teaspoon balsamic vinegar
-
A pinch of salt
-
1 teaspoon extra virgin olive oil
Procedure:
Simmer everything until it becomes thick and “jammy” (about 25–30 minutes). Leave to cool.
Assembly:
– Toast some slices of ciabatta with a drizzle of olive oil
– Spread the tomato jam
– Add a scoop of Parmesan ice cream
– Garnish with fresh basil and ground black pepper
